For this week’s prep I went with a tried and true recipe. Chicken burgers with sweet potatoes and green beans. Last week I did a follow up post since it was a new recipe, but going forward I will only do Friday follow ups if it’s a new recipe. This one doesn’t need a follow up because I’ve used this particular recipe quite a few times. Just know that, as long as the chicken burgers aren’t over cooked, they last (and continue to be delicious) through the whole week!

Day 1 – Monday
The recipe book says you can eat cold or re-heat. I decided to re-heat for the first day. The chicken was still nice and juice, not tough at all. The cauliflower rice was on point, but the broccoli was too soft (which I feared after cooking). Next time I’ll steam or roast the broccoli. The recipe had me boil it.
Also, the yogurt sauce was pretty great. Had a nice little kick and offset the sweetness from the lemon on the chicken really well. However, I only used about half of what I made, so next time I’ll probably halve the recipe. Continue reading “Meal Prep Follow-Up – Lemon Garlic Chicken”
The first official meal prep of 2020 has been completed! I picked up this book, and I’m working through a few of the recipes while mixing in some of my staples to keep things entertaining. So this week is Lemon Garlic Chicken with a yogurt sauce.

For 2019 I sent a challenge to read 36 books. I did not hit this goal, but I still managed to read or listen to 30 books over the year. Looking back at the list though I feel I could’ve done better. A lot of the books were graphic novel quick reads, and I’m a little disappointed I didn’t do more non-fiction. However, I have a large list of non-fiction to work through for 2020!

My first (and most recent) meal prep post was nearly a year ago. With two of my goals for 2020 being get healthier and write more I figured I could combine them. My plan is to post each week I actually do the prep. I’m hoping this will provide some added motivation to do the food prep. I think now that all the holiday craziness is over I should have more time on Sundays to do the thing.
I only meal prep my lunch and snacks for work days because the weekends tend to be too chaotic for planned foods. I would typically meal prep breakfasts too, but I’m getting back to intermittent fasting (eating only between 12 and 8) to help with the initial weight loss push of the year. I don’t meal prep dinners because my partner can’t seem to bring himself to eat the same meal multiple days in a row. So, look forward to seeing a lot of lunch meal preps coming this way!
For funsies I’m posting my “meal prep” for the next two days at work before the weekend. It’s in quotes because it’s one of my lazier meal preps, but it’s still better than nothing so here you go!

As we prepare for the final holiday push of the year I have some time to reflect. It’s been a year of ups and downs, but that’s every year right?
2019 started with a New Years Eve party in our new house (moved mid-December 2018). It also started with a contract on the old house we had been trying to sell since November. All things off to a good start! Through the year the toddler toddled and turned into a three and a half year old with a willful personality. I hated a job, left that job, found a new job, and became CRISC certified.

In the Sims 4 at least. She asked me to build a house for a lady with cats so we did just that! I want to preface the incoming pictures with this:
She had full control over the layout of the interior of the house, the items used, and the color scheme chosen. Overall, she did a fine job, and it was a fun thing to do together as we talked through important things needed in a home.
Exterior front of the home. We didn’t do much decorating on the outside of the house, maybe we’ll get back to this at some point, but the in-game family ran short on funds.

This was really fun to do with her, and I hope we can make more houses. There is actually another one that we did before this with mermaids. Maybe someday I’ll share that one too. 🙂
I struggle basically all the time with self image and weight control. Not weight loss. That I’ve proven time and time again I can do. Weight control feels unattainable. I get to a point where I’m pretty happy with my weight. Then I just stop paying as close attention to what I’m shoveling into my gaping maw. I slowly watch the weight climb back up telling myself “it’s only 5 pounds, I can knock that off easy.” until I get to the day where I’m saying “fuck! 40 pounds!?? How did I let this happen?” Which is where we are right now.
I want to tell myself that this time is finally it. I’m finally done with yoyo dieting and fluctuating weight. I want to tell myself I’ll go to the gym every week forever and ever until it’s just part of the routine, but I know I won’t. I know I’m not that person. People keep telling me “one day at the gym is better than no days”, and while that logically makes sense one day at the gym doesn’t fix what I’ve done to myself over the last several months. One day at the gym doesn’t keep me from over eating.
There used to be a time when I would wake up and do yoga every morning before work. That time was before I got pregnant, before I had my kid, before I had so many excuses not to get up early. Now, I do okay with gym/workout routines for a few weeks or months, but as soon as something messes with that routine (holidays, special events, sickness, anything that throws it off course) I don’t bounce back. I just let the routine fall away until I get here again.
Here, 40 pounds heavier. Afraid to get on the scale. Afraid to look in the mirror naked. Afraid I’ll be fighting this, myself, weight forever.
Ten years ago I got the ambitious idea to play through all primary Final Fantasy games from the first one until the last one. This didn’t include Tactics, the online ones, or off-shoots from X and XII. So Final Fantasy’s number I through XII at that point are going to be played. Well, I’m here to tell you that I’m still, VERY SLOWLY, working through these.
Ten years ago I started Final Fantasy I… I actually had a different blog then where I talked about that. I’m sure it’s still exists somewhere on the internet, but I don’t even remember which domain name I was using at that point in time… Oh well!
Over the past few years I’ve finished FF VI, VII, and I started VIII over the weekend. See! Progress, the slowest progress ever, but progress none-the-less. Whoohoo. I’m excited to be play VIII. I honestly don’t think I ever have. I think I skipped it and went strait to IX. So, now I’m playing the remastered VIII on the Switch (I initially meant to play the original on the Vita, but the remastered came out before I got to that), and I really want to understand the card game! I’m just not. I’ve already lost the first set of cards I’d gotten along with the Ifrit card. 😦 So clearly I need to do some reading maybe on how it works. I thought I had it figured out… maybe I’m just bad at it.
Anyways, I wanted to post something here, and FF VIII is at the top of my mind right now. Outside of work related things anyways so I’m sharing my joy. I’m hoping I can finish VIII before the end of the year so I can dig into IX again! It’s been a long, long time since I played IX, and I’m excited to see my pal Vivi again!
After my last post I updated my resume, and started my job hunt in earnest. It, thankfully, didn’t take too long for me to land something, and I started my new job at the beginning of September! So far, it’s been more fulfilling than the last job, and that’s exactly what I was hoping for. I switched from a worldwide organization to a small local office, and the atmosphere is just so much better. I couldn’t be happier with this decision. My job is different enough to feel new, but the same enough that I feel like I’m capable enough only three weeks in. Feels good.
